Ingredients:

  • 1 cup cottage cheese
  • Salt & pepper to taste
  • Shredded cheese (smoked gouda is my fave)
  • Cooked bacon or sausage

Instructions:

  1. Preheat oven to 350°F
  2. Grease a muffin tin (or use silicone liners/pan)
  3. Blend eggs, egg whites, and cottage cheese until smooth
  4. Add a layer of meat to each muffin cup and top with a pinch of shredded cheese
  5. Pour egg mixture evenly into muffin cups
  6. Bake for 25 minutes, or until set
  7. Let cool slightly, then remove
