Getting Ready for All Those Farm Fresh Eggs
In preparation for my future daily supply of eggs from my chicks, Iβve been working on my egg salad recipe!
This one is a keeper.
Despite how incredibly simple it is, this has become one of those go-to recipes I come back to over and over again.
Itβs perfect for:
- Baby and wedding showers
- Ladies lunches and church events
- Quick summer lunches
- Piled high on top of a thick slice of fresh homegrown tomato π
Simple recipes just have a way of sticking around.
And this one absolutely deserves a permanent spot in the rotation.
π Ingredients
- 12 hard boiled eggs, peeled & grated
- Β½ cup mayo
- 1 tsp yellow mustard
- 1 tbsp chopped dill pickle (relish works too)
- 1 tsp kosher salt
- 1 tsp pepper (coarse pepper is best)
- 10 slices white bread, crust removed
Homemade bread is definitely a WIN here!
π©βπ³ Step-by-Step Directions
π₯ Step 1: Hard Boil the Eggs
Bring a large pot of water to a boil.
Using a slotted spoon, gently lower eggs into the water. Cover and boil for 13 minutes.
Transfer eggs immediately to an ice bath and let cool for about 10 minutes.
π The shells practically fall off using this method!
π§ Step 2: Grate the Eggs
Once peeled, grate the eggs into a medium mixing bowl.
And yes⦠I use my regular cheese grater for this and it works perfectly.
π This gives the egg salad the BEST texture.
π₯£ Step 3: Mix the Egg Salad
Add:
- mayo
- mustard
- chopped dill pickle
- salt
- pepper
Mix until everything is well combined.
π Step 4: Build the Sandwiches
Remove crusts from bread slices and lightly spread mayo on each piece of bread.
Add a generous scoop of egg salad andβ¦ you know what to do from there π
