Easy Egg Casserole (Egg Cass) | High Protein Breakfast for the Week

A Real-Life Breakfast Win

Last week was BUSY.
Okay… who am I kidding—most weeks are busy.

This Egg Casserole—or Egg Cass as we call it—is what converted me.

I grew up thinking I didn’t really like eggs.

Turns out, I just like the incredible, edible egg… with a little flavor.

This Egg Cass, with hot sausage (but really, any sausage works), added just the right amount of zazz for me to learn to love all things egg.

And here’s the best part—

With just 4 ingredients, you can have breakfast ready for the whole week in no time.

🛒 Ingredients

  • 12 eggs
  • ½ cup cottage cheese (optional, but adds protein + creaminess)
  • 2 cups shredded cheddar cheese
  • 1 lb hot breakfast sausage (browned)
  • 1 roll canned pastry dough

👩‍🍳 Directions

  1. Preheat oven to 350°F and grease a 9×13 pan
  2. Blend eggs and cottage cheese until smooth
  3. Stir in sausage and shredded cheese
  4. Line the bottom of your pan with pastry dough
  5. Pour egg mixture over the dough
  6. Bake uncovered for 30 minutes or until center is set

💡 Make It Your Own

Just like most egg dishes, this one is super flexible:

  • Add peppers, onions, or spinach
  • Swap sausage for bacon or ham
  • Use different cheeses
  • Skip the pastry dough for a lower-carb option

Meal Prep Tip (This is the Game Changer)

Let the casserole cool completely, then:

  • Cut into squares
  • Wrap individually
  • Store in the fridge for quick grab-and-go breakfasts

This has saved our mornings more times than I can count.
