This Egg Casserole—or Egg Cass as we call it—is what converted me.
I grew up thinking I didn’t really like eggs.
Turns out, I just like the incredible, edible egg… with a little flavor.
This Egg Cass, with hot sausage (but really, any sausage works), added just the right amount of zazz for me to learn to love all things egg.

🛒 Ingredients
- 12 eggs
- ½ cup cottage cheese (optional, but adds protein + creaminess)
- 2 cups shredded cheddar cheese
- 1 lb hot breakfast sausage (browned)
- 1 roll canned pastry dough

- Preheat oven to 350°F and grease a 9×13 pan
- Blend eggs and cottage cheese until smooth
- Stir in sausage and shredded cheese
- Line the bottom of your pan with pastry dough
- Pour egg mixture over the dough
- Bake uncovered for 30 minutes or until center is set
